Mocha
Ancient port in Yemen, which shipped supplies of coffee to Europe from the 16th to the 18th centuries. Also, the name given to a prestigious kind of arabica which originated in Ethiopia.
Natural
The opposite of washed. It refers to dry-processed beans which are dried naturally by the sun.
Percolation
One of the two main methods of making coffee, in which hot water is passed through a filter containing the grounds, as in espresso. The other method in infusion.
Robusta
One of the 50 varieties of Coffea canaephora pierre. Grown mostly in Africa, Brazil and South-East Asia. More resistant to disease, robusta makes stronger, more bitter coffee than arabica.
