WHISKEY GLOSSARY OF TERMS
Maturation
When a spirit is filled into a cask it reacts over a period of years with chemicals within the wood, to form its ever-changing character. The longer the whiskey is kept in the wood the greater the wood influence will be. Whiskey only matures in wood, never in glass. So the the age of a whickey on the bottle shows the age of the youngest whiskey used in the bottling. It does not get any older once bottled.
Fermentation
Explosive period during the brewing process when sugar-rich liquid wort reacts with yeast.
Blending
Process/art form of mixing malt or pot still whiskey with grain whiskey.
